Eggplant rolls with sausage and caramelized red onion
Grilled aubergines, a tasty filling and Mediterranean breading for an irresistible explosion of flavour.

Ingredients:
1 kg of sausage
Extra virgin olive oil
1 clove of garlic
Rosemary
Eggplant

Method

  • Cut the aubergines Thinly sliced. In a hot pan with a drizzle of oil, grill them on both sides.
  • In another pan, heat oil and garlic, then add the crumbled sausage and rosemary. Let it cook completely.
  • In the last minutes, join the caramelized red onion, mix well and let the mixture cool.
  • Stuff each slice of aubergine with the filling and roll up to form the rolls.
  • Brush each roll with a drizzle of extra virgin olive oil, then pass it in Mediterranean breading to make it adhere better.
  • Bake at 200° in the oven preheated for 7 minutes.
