Breaded and fried anchovies stuffed with stringy provola cheese

An irresistible, crunchy and stringy recipe that will amaze everyone!

Ingredients:
300 g fresh anchovies
100 g of provola cheese
1 egg
Salt to taste
seed oil for frying

Method

-Clean the anchovies and open them open like a book. Cut the provola into strips or thin slices so they can be easily inserted between the anchovies.
-Take an anchovy, dip it in the beaten egg with a pinch of salt, place a piece of provola on top and close with another anchovy, also dipped in the egg.
-Pass the stuffed anchovies through the Milanese breading, making sure they are well covered on all sides.
Heat plenty of seed oil in a pan and, when it is very hot, fry the stuffed anchovies a few pieces at a time, until they are golden and crispy.
Drain on paper towels to remove excess oil.
Serve the fried anchovies piping hot, perhaps accompanied by a salad or sauce.
