Method
– Per la Biga, impastare velocemente la farina, l’acqua tiepida e il lievito. -Fare riposare l’impasto in frigo per 20 hs.
– Alla biga aggiungete l’acqua poco per volta, il sale e alla fine l’olio evo. Fate delle pieghe sul banco e lasciate lievitare l’impasto in una coppa fino al raddoppio.
– Dividete l’impasto in tre, formate i panetti e lasciateli raddoppiare. Stendeteli su abbondante semola schiacciandoli con le dita, un filo d’olio e poi chiudeteli a mezzaluna
– Nel frattempo tagliate a straccerei il manzo e conditelo con il beef rub and bake until crispy.
– Cuocete le tasche in forno fino a quando non saranno dorate.
– Apritele e conditele con valeriana, straccetti, honey bbq and caciocavallo.
