Here is a recipe that is very crunchy on the outside and very soft on the inside, with a tasty and stringy filling.
Method
-Iniziare schiacciando le patate bollite all’interno di una ciotola. Aggiungere un tuorlo, il Pork Rub, il parmigiano grattugiato e l’amido di mais, amalgamare tutti gli ingredienti prima con una forchetta, poi impastare qualche minuto con le mani fino ad ottenere un impasto morbido ma compatto.
-Prepare the filling for the bombettes by combining the chopped sausage with the casing removed and the cheese grated with a grater with large holes, or cut into small cubes.
-Dividere l’impasto di patate ottenuto in precedenza in più parti uguali, farcirle al centro con la salsiccia e il formaggio e richiuderle accuratamente formando delle pallotte di ugual misura.
-Passare tutte le bombette prima nell’uovo sbattuto, poi panarle con i fiocchi di mais sminuzzati grossolanamente con le mani.
-Disporle su carta forno e cuocerle in forno o in friggitrice ad aria a 200 gradi per 15 minuti con un filo abbondante di olio in superficie, finché risulteranno perfettamente dorate.
