Method
-Pulire le alici ed aprirle “a libro”. Tagliare la provola a striscioline o fettine sottili, in modo che possano essere facilmente inserite tra le alici.
-Prendere un’alice, passarla nell’uovo sbattuto con un pizzico di sale, adagiarci sopra un pezzetto di provola e chiudere con un’altra alice, anche questa passata nell’uovo.
-Pass the stuffed anchovies through the Milanese breading, making sure they are well covered on all sides.
Scaldare abbondante olio di semi in una padella e, quando è ben caldo, friggere le alici ripiene pochi pezzi alla volta, finché non saranno dorate e croccanti.
Scolare su carta assorbente per eliminare l’olio in eccesso.
Servire le alici fritte ben calde, magari accompagnate da un’insalata o da una salsa.
