Method
-peel the potatoes and cut them into cubes
-incidi il calamaro così da farlo cuocere più omogeneamente
-prepara la salsetta per condire il calamaro con olio, mezzo limone e Rub SPG e frulla tutto con il frullatore a immersione così da ottenere una salsa bella emulsionata
- blanch the potatoes in boiling water for 5-8 minutes
-sauté the potatoes in a pan with oil, garlic and rosemary until they become golden
-Sear the squid in a pan or hot grill for 2 minutes per side
-Plate the squid on a bed of rocket then add the previously prepared sauce with lemon oil and rub GSP
-add a few slices of lemon
